I mostly use ash glazes where I have the process down to a very simple method. I use a sprayer, actually I have lots of sprayers. I like the HVLP from Harbor Freight the best, I have two of them. For the ash glaze, I screen it through a 40 mesh screen and then an 80 mesh screen. I spray using 40 PSI.

6 Lb can Great Nothern Beans
2 Chorizos (Mexican Sausage)
2 cans chopped Chiles
1 bag chopped Collard Greens
2 BIG Onions chopped
2 Cloves of Garlic
1 Qt H20
4 boullion cubes (Chicken)
4 Potatoes Cubed
1/2 Lb Ham Cubed
1 Bell pepper chopped

Place the meat in the Qt of water and bring to a simmer, cooking for a 1/2 hr.
Add collards and beans, slow cook for another 1/2 hr.
Meanwhile, saute onions, pepper, chiles and garlic in olive oil or bacon fat.
Add diced potatoes (I use canned potatoes).
Add everthing else and cook for another 1/2 hr.
Serves 6. Great with Chris Stones’ corn bread.
